It was the best eggplant I have ever eaten! He used panko bread crumbs and fresh mozzarella...it was to die for! He cooked it as my birthday dinner, just a few days late! Wink

Wow! What a great present. My hubby does not cook. Well, he does make his own eggs when he wants them, but that's about it.

My husband just started taking an interest in cooking after almost 23 years of marriage! It is truely a wonderful thing because he is quite good at it!

He mainly does it on special occasions.

Here is the link to the Biscotti recipe.

I make a few modifications. I use half white and semi sweet chocolate and just chop it up and stir in the batter. I don't melt the chocolate in the double boiler to dip it. I also add hazelnut or almonds about 3/4 cup.

Well, better get my butt in gear and start making some!

Thanks! That recipe sounds awesome!! I don't think I will have time to do that for Christmas Eve, but I will try it after Christmas. If I get good at it I will make some for next years holidays.

When you add the nuts and chocolate pieces, is that in addition to the dried cranberries?

Also you said you don't make yours as hard, does that mean you don't bake it as long?

I do add the chocolate and nuts in addition to the cranberries.

I just follow the cooking times of the recipe, but I just don't let it get very brown. I have a convection oven so it may cook a little faster than the recipe times.

I am going to make some today so will let you know for sure!

Is that a hint? Laughing I will put you on my biscotti reservation list for next year for sure!! I am running out of time this year and need to send off what I made today to a friend in california and the rest goes for a cookie exchange at work tomorrow. Then with my 5 day a week work schedule until Christmas and no tree up yet, I'm afraid today is my only baking day until next weekend when I am baking for more co-workers.

Well, I cut my biscotti a bit fatter than 1/2 inch so I'm sure that makes mine a bit less crunchy, but that is how I like them! Wink I say if you like them more crispy cut them thinner. Mine are nice and crisp on the outside, but nice and chewy on the inside.
