| I am getting so excited about the holiday baking season and loving all the recipes!! I know I will cry many times during the season about my sweet dad not being with us, but I am going to try and make it a wonderful time for all my family! | Curry Pumpkin Soup [size=9] 1 recipe Orange-Cranberry Topper (see recipe) 2 Tbsp. butter 2 medium onions, chopped (1 cup) 1 medium carrot, chopped (1/2 cup) 1 stalk celery, chopped (1/2 cup) 1 tsp. curry powder 1 tsp. pumpkin pie spice 2 15-oz cans pumpkin 2 14-oz cans reduced-sodium chicken broth 2/3 cup water 1 cup half-and-half or light cream 1/2 tsp salt 1/4 tsp ground black pepper Directions 1. Prepare Orange-Cranberry Topper. 2. In 4-qt. Dutch oven melt butter over medium heat. Add onions, carrot, and celery. Cook, 10 minutes, stirring occasionally, until softened. Add curry powder and pumpkin pie spice. Cook and stir 1 minute. Add pumpkin, broth, and water. Increase heat to medium-high; bring to boiling. Reduce heat to medium-low. Simmer, covered, 15 minutes. Remove from heat; cool slightly. 3. In food processor or blender, add one-third of the pumpkin mixture at a time, cover, and process or blend until smooth. Return all pumpkin mixture to Dutch oven. 4. Stir half-and-half, salt, and pepper into pumpkin mixture; heat through. Sprinkle each serving with Orange-Cranberry Topper. 5. Orange-Cranberry Topper: In small bowl combine 1/2 cup dried cranberries, 1 tablespoon finely shredded orange peel, and 2 tablespoons snipped fresh Italian (flat-leaf) parsley. Serves 8. |

| Pumpkin Spice Cake
Ingredients (use vegan versions):
8 tablespoons margarine (softened) 1 1/2 cups maple syrup 2 egg substitutes 2 cups pumpkin (baked and mashed or puree from can) 1 teaspoon vanilla 1 cup unbleached white flour 1 cup whole wheat flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 teaspoons apple cider vinegar 1 teaspoon each: cinnamon, ginger 1/2 teaspoon each: nutmeg, cloves 1/2 cup pecans (chopped)
Directions:
Oil and flour 2 8 round pans. Preheat oven to 350 degrees.
Mix together flour, baking powder, baking soda, salt and spices.
In a separate bowl mix all remaining ingredients except pecans.
Slowly add wet ingredients mixture into dry mixture. Add pecans.
Pour into pans. Bake 30 minutes or until fork comes out clean. A vegan cream vegan cheese frosting tastes great on this cake.
Serves: 2- 8 cakes
Preparation time: 15 minutes+bake time |

| I told you I love pumpkin. I can't have eggs , so if it says egg sub of course just use eggs. My sister got me Pumpkin Lotion, Hair conditioner, body wash , soap, everything pumpkin. and of course my cat's name is Punkin. |

| I call Justin "punkin noodle". He was always punkin but I added noodle a few years ago because he wants something with noodles in it every.single.day.  We are having pasta again today because he asked for it! I have made pumpkin spice cake! So good! I am so jealous you have pumpkin lotions etc.!!!!!!!!! I didn't even know they made that!! I always go for the Ocean scents or lavender. Now I am off to Amazon and Ebay to find some Pumpkin things!! I always bring my cousin Lynn a gift on Thanksgiving (besides the mashed potatoes and desserts) since she does so much work to make it a wonderful Thanksgiving every year - so I am going to get her a set too if I find some! _________________ "You can kinda just be. | Butternut Squash Bake [size=9] Ingredients 1-1/2 lb. butternut squash, peeled, seeded, and cut in 1-inch cubes (3 cups) 2 Tbsp. olive oil 8 oz. dried extra-wide noodles 4 Tbsp. butter 6 shallots, chopped 1 Tbsp. lemon juice 1 8-oz. carton mascarpone cheese 3/4 cup grated Parmesan cheese 1/2 cup fresh Italian (flat-leaf) parsley, snipped 1 cup panko (Japanese-style) bread crumbs or soft bread crumbs Directions 1. Preheat oven to 425 degrees F. In bowl toss squash in oil; place in oiled 15x10x1-inch baking pan. Roast, uncovered, 30 minutes, until lightly browned and tender, stirring twice. 2. Meanwhile, in Dutch oven cook noodles according to package directions. Drain; set aside. In same Dutch oven melt 2 tablespoons of the butter. Add shallots; cook and stir over medium heat for 3 to 5 minutes, until shallots are tender and butter just begins to brown. Stir in lemon juice. 3. Add noodles and squash to shallot mixture. Stir in mascarpone, 1/2 cup of the Parmesan, 1/4 cup parsley, and 1/4 teaspoon each salt and black pepper. Transfer to greased 2-quart oval gratin dish or baking dish. 4. In small saucepan melt remaining 2 tablespoons butter; stir in bread crumbs, remaining Parmesan, and parsley. Sprinkle on noodle mixture. Bake, uncovered, 10 minutes, until crumbs are golden. | I haven't tried this one.........yet! I just received it from my Sis. What could be easier? MINUTE CHOCOLATE MUG CAKE 1 Coffee Mug 4 tablespoons flour(that's plain flour, not self-rising) 4 tablespoons sugar 2 tablespoons baking cocoa 1 egg 3 tablespoons milk 3 tablespoons oil 3 tablespoons chocolate chips (optional) Small splash of vanilla Add dry ingredients to mug, and mix well .. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired. EAT! (this can serve 2 if you want to share!) And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night |

| OMG how cool is that!! I am so going to have to try this for fun some day. It probably isn't worth it as my family loves when I make chocolate cake and will just be annoyed that there is enough for them! I think I should print the recipe out and put it on the fridge! | I love reading the recipes here (well the savoury one's coz I don't have a sweet tooth at all) Really gonna try the Jalapeno Poppers! Now here is my recipe for Crispy Aromatic duck  ( & yes ...I really really did do this!!) OK - Crispy Aromatic Duck with a twist! Couldn't affford duck...so I used chicken...stuck it in the oven to roast (timings vary - please refer to guides) Prepare spring onions & cucumber Make little pancakes (um...I bought them!) Make plum sauce (um...I bought it) Heat up plum sauce & add cooking sherry (one measure in sauce...& one measure down the throat) Keep tasting sauce & adding sherry as desired Keep tashtin shauce & drinking sherry (HICK) :drunken: Fall asleep in chair Wake up to smoke alarm.....IMPORTANT...turn OFF the oven before falling into bed! Bet you can't wait for my version of a traditional roast dinner!!! |
