| OK, Eric has been bugging me to make the Jalapeno Popper recipe with the fresh jalapenos. So since he has no classes on Fridays and I am off today and staying home (good thing since the weather SUCKS) I made these this afternoon! http://texas2two.multiply.com/recipes/item/84/84They are easy to make and look really good for a party appetizer!. They are a wee bit too hot for me - but Eric LOVED them! I prepared a bunch of them so when Rob and Justin get home from work I will put more in the oven for them. | They are pretty powerful! I don't drink milk (which I read helps put out the fire) so I drank a ton of water and it doesn't work  I was OK when I cut up the first two in small bites, but later I popped a whole one in my mouth and THAT was trouble! Plus, I dug the seeds and pulp out with my right thumb and it is still on fire. I guess I learned my lesson on that. Wear those disposable gloves! _________________ "You can kinda just be. | Parkers Split Pea Soup 1 cup chopped yellow onions 2 cloves garlic, minced 1/8 cup good olive oil 1/2 teaspoon dried oregano 1-1/2 teaspoons kosher salt 1 teaspoon freshly ground black pepper 2 cups medium-diced carrots (3 to 4 carrots) 1 cup medium-diced red boiling potatoes, unpeeled (3 small) 1 pound dried split green peas 8 cups chicken stock or water In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot. This is really good! I sub veg broth for the chicken broth. |

| Pumpkin Chocolate Chip Bread
Ingredients (use vegan versions):
1-3/4 cups flour 1.5 cup sugar 1 teaspoon baking soda 1 teaspoon cinnamon 3/4 teaspoon nutmeg 1/4 teaspoon allspice 1/4 teaspoon clove 1/4 teaspoon ginger 1/8 teaspoon salt 1 cup pumpkin puree 1/2 cup margarine, melted 1 cup vegan chocolate chips egg substitute for 2 eggs (Ener-G Egg Replacer or whatever you want) 1/3 cup water
Directions:
Preheat oven to 350 degrees F. Grease 2 medium loaf pans. Combine dry ingredients. Mix wet ingredients and then stir in dry ingredients. Stir in chocolate chips. Pour into pans. Bake 45-50 minutes.
Notes: You can: -- cut the vegan sugar to 1 cup if you want. (I like it sweet.) -replace some of the water with orange juice or soy milk (I used Vitasoy enriched vanilla)
The amounts are my preference, but you don't need all the spices, just a couple of sweet spices, whatever amounts you want. For ginger, I used fresh ginger, just blended it with the egg replacer and added it to the wet ingredients.
You can add vanilla, too. You could probably replace some of the regular vegan sugar with vegan brown sugar or vegan maple syrup or whatever you wanted. Also, you might want to add a couple more tablespoon water or pumpkin if your batter looks too thick. Its a REALLY flexible recipe.
Also, it can be used for muffins or to make just one big loaf (in a 9X5 loaf pan).
You can eliminate the chips and replace all or part with nuts, dried cranberries or raisins.
